A recent study conducted by the University of Milan has revealed that Derthona timorasso wine is much more complex than one might think. It is not just a matter of honey and hydrocarbon: its sensory identity is rich and surprising, with aromas ranging from citrus to balsamic notes. Moreover, oenological practices profoundly influence its sensory profile, creating very different wines. Professor Monica Laureati of the University of Milan tells us about it.
